Arrabbiata

  • 400 g pasta
  • 3 cloves garlic
  • 1 red chili (or chili flakes)
  • 200 g canned tomatoes
  • 2 tbsp tomato paste
  • olive oil
  • salt, pepper
  • handful of basil leaves
  • parsley and grated parmesan to garnishg
  1. Fry chopped garlic and chili in olive oil.
  2. Add canned tomatoes, and crush them roughly.
  3. Add tomato paste, and simmer for 10 minutes.
  4. Turn off the heat, and add the cooked pasta and the basil leaves.
  5. Add pasta water, salt and pepper if needed.
  6. Serve with parmesan and chopped parsley.
